Gourment Wedding Menu at Brecon Castle Hotel Wales

The following is an example of a "Gourmet" Menu at £45.00 per head*.  Menus can be individually tailored to suit your specific requirements:

Entrée

Locally smoked venison or duck with a broad bean, red onion and rocket salad with a balsamic dressing

Trio of salmon with asparagus spears and a hollandaise sauce

Ham hock and parsley terrene with a mizuno and parmesan salad and tomato jelly

Mains

Roasted beef fillet with a sweet potato puree roasted vegetables served with a re wine and port reduction

Honey and orange glazed Gressingham duck or goose breast with gratin dauphinoise, braised red cabbage and a cherry jus

Whole roasted black bream with a warm salad of fennel and chervil and a beurre blanc sauce

Desserts

Assiette of pudding

Original crème brulee

Bread and butter pudding with toffee sauce and vanilla ice cream

Chocolate brownie with ice-cream and sauce

Raspberry and lemon cheesecake

Lemon torte

White chocolate filled profiteroles
